Add garlic, stir for 10 seconds. Add noodles, then using both hands on the handle, toss 4 times until coated with oil (or gently fold using a spatula + wooden spoon, see video). Heat your wok to medium heat, and spread 1 tablespoon of vegetable oil around the perimeter of your wok. Add the sliced Chinese sausages and stir-fry for 20 seconds. Add the 2 cloves of sliced garlic, the shrimp, and the fish tofu. Continue stir-frying for another 20 seconds. Char kway teow is made of a mix of flat rice noodles and yellow wheat noodles, stir-fried over high heat with light and dark soy sauce, garlic, chilli, lup cheong (Chinese waxed sausage), egg, fishcake and beansprouts.
